Get character witnesses to show that she is a good person. If you can "prove" her intention was not to steal, then you can win the case. Remember, you must persuade the jury not anyone else. Also, the fact that it was only three days. If you can prove that those three days were very busy, then that would be good. I would have been nice if she had called the restaurant though. How did the police find her in the first place? Seems very odd that they would have the ability/knowhow to find her. She is a needle in a haystack.
